Marinated seal skewer

Ingredients

• 1 kg (2 lb) seal meat
• 2 ml (½ tsp) salt
• 1 onion, finely diced
• 60 ml (¼ cup) parsley, chopped
• 60 ml (¼ cup) cilantro, chopped
• 2 ml (½ tsp) ground cumin
• 2 ml (½ tsp) smoked paprika
• A few pistils of saffron
• Freshly ground pepper to taste
• 125 ml (½ cup) olive oil

Preparation

• Cut the meat into thin slices.
• Salt the meat and add diced onion, parsley and cilantro.
• Incorporate the remaining spices and olive oil. Let marinate for 1 hour.
• Thread the thin strips of seal onto small wooden or bamboo skewers like a ribbon.
• Cook in a frying pan on high heat for a few minutes, or in the oven for 5 minutes at 180°C (350°F).
• Serve with a little mayonnaise spiked with cumin and fresh cilantro.
